  1. Peanut Masala (4 Serve)

Ingredients-

  • 2 cup Haldiram Gupshup peanut
  • 1 tbsp Coriander
  • Green Chillies as per taste
  • 1 Lemon
  • 1 Medium Sized Tomato
  • 1 Medium Sized Onion
  • Salt to taste
  • Boiled potatoes (Optional)

Method-

Finely Chop Onion, Tomato, Green Chillies and Coriander. At the time of serving, Mix peanut, chopped vegetables, Squeeze lemon  and add salt. Mix and serve.

2. Corn Bhel (4 Serve)

Ingredients-

  • 4 cup American Corn
  • 1 teaspoon chat masala
  • 1/2 teaspoon red chili powder
  • 1 teaspoon butter
  • 1 Medium Sized Tomato
  • 1.5 tablespoons grated cheese
  • Salt to taste
  • 1 Tbsp Coriander

Method-

  1. Boil water and add the sweet corn on to the boiling water. Boil for 5 minutes. Drain the water and set the sweet corn on a bowl.
  2. Add chat masala, chili powder and butter to the corn. Stir and mix well with salt.
  3. Add half of the grated cheese to the corn. Cook in microven for a minute on high powder
  4. Garnish with remaining grated cheese, chopped tomatoes and coriander leaves.

3. Super Nachos (2 serves)Image result for nachos in salsa

Ingredients-

  • Nachos 60 g (Cornitos or any other barnd of your choice)
  • Salsa Sauce (2 tbsp)
  • Tomato Ketchup (1 tbsp)
  • a few sliced spring onions or 1 chopped onion
  • 1 chopped Tomato
  • Salt, pepper, Chilli flakes & Oregano seasoning to sprinkle
  • Coriander leaves to garnish

Method:

  • Mix Onions, Tomatoes, Salsa, Tomato Ketchup, salt, pepper, oregano & chilli flakes in a bowl.
  • In serving tray, spread Nachos & pour above mix over it. Toss, garnish with coriander & serve immediately.

4.  Fried Cauliflower (4 serves)Crisp Cauliflower Fry is a popular Indian Snacks

Ingredients:

  •  1 – Cauliflower (medium size)
  • 1/5 cup – Rice flour
  • 2-3 tsp – Corn flour
  • 1.5 tsp – Red Chilli powder
  • 2-3 pinches – Turmeric powder
  • salt as needed
  • oil for deep frying

Method:

  1. Cut cauliflower into florets. Boil the pieces in water with salt and turmeric. Turn off the flame, let the pieces stay covered for 10-15 minutes and drain the water completely.
  2. Take the cauliflower pieces in a broad vessel, sprinkle rice flour, corn flour, chilli powder and salt.Mix well so that the chilli powder coats the cauliflower, else sprinkle a little water to make it stick.
  3. Heat oil in a pan and cook the florets over medium flame until golden brown and crisp. Serve hot with Ketchup, green chutney or dip of your choice.

5. Potato Cheese Balls (12 portions)

Ingredients:

  • 4 boiled potatoes
  • 1 cup grated processed cheese
  • 3 green chillies, finely chopped
  • 1/2 teaspoon ginger, finely chopped or minced
  • 4 cloves garlic, finely chopped
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 2 teaspoon fresh coriander leaves, finely chopped
  • 2 tablespoon bread crumbs
  • Oil for deep frying
  • Salt to taste

Method:

  1. Grate the Cheese
  2. Mash Boiled potatoes. Add green chillies, ginger, garlic, red chilli powder, turmeric powder, coriander leaves, bread crumbs and salt to taste and mix.
  3. Divide the potato mixture in small balls or portions.
  4. Take some oil in your palms, make a cavity in center of potato balls to stuff good amount of grated cheese in it. Use palms to wrap the balls.
  5. Heat oil for deep frying.
  6. Cook these balls on medium flame, so that you can enjoy the melted cheese and properly cooked potato mixture while eating. Keep frying and flipping for 2-4 minutes, till the balls turns out golden brown in color.

6. Masala Papad (4 serves)

Ingredients-

  • 4 Urad/Moong Papad
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomatoes
  • 1 tablespoon chopped coriander leaves.
  • 1 teaspoon lime juice
  • 1 tsp Chat masala, red chilli powder, pepper powder and black salt each
  • 1/3 cup Nylon Sev
  • Oil for frying

Method:

  1. Make 4 quarters of each papad and fry them. Place aside on an absorbent napkin to absorb excess oil from the papads.
  2. Mix chopped onion, tomato, coriander, lemon juice
  3. Spread papad on serving tray and add toppings. Sprinkle chat masala, red chilli powder, pepper powder and black salt.
  4. Lastly garnish with nylon sev and serve your masala papad immediately.

7. Chinese Bhel

Ingredients:

  • 3 cups fried noodles
  • 1 tbsp oil
  • 2 tsp finely chopped garlic (lehsun)
  • 1/4 cup finely chopped spring onions
  • 1/2 cup thinly sliced capsicum
  • 1/2 cup carrot juliennes
  • 1/2 cup shredded cabbage (optional)
  • 1/4 cup schezuan sauce
  • 1/4 cup tomato ketchup
  • salt to taste

Method-

  1. Heat the oil in a broad non-stick pan or a wok, add the garlic and sauté on a high flame for a few seconds.
  2. Add the spring onions whites and greens, capsicum, carrots and cabbage and sauté on a high flame for 30 seconds.
  3. Add the schezuan sauce, tomato ketchup and salt, mix well and cook on a high flame for a few seconds.

  5. Add the fried noodles and toss well.
  6. Serve immediately garnished with spring onion whites and greens.

8. Babycorn Fingers

Ingredients-

  • Baby Corn – 12 to 15
  • Maida – 2 tbsp
  • Rice Flour – 1.5 tbsp
  • Garam Masala Powder – 1/4 tsp
  • Ginger Garlic paste – 1/2 tsp
  • Corn flour – 2 tbsp
  • Chat masala powder – 1/4 tsp
  • Chilli powder – 1/2 tsp
  • Cooking soda – a pinch (optional)
  • Salt- to taste
  • Oil – to deep fry

Method-

  1. In a bowl add all other ingredients except oil and baby corn. Add little water to make a running paste
  2. Pressure cook baby corn (Slit into halves if size is big) for 1 whistle
  3. Dip each baby corn in the batter and deep fry in the preheated oil in batches till golden brown.Drain it in a tissue paper to take out the extra oil.
  4. serve with Hummus, Mayonnaise or Dip of your choice

9. Chilli Mushroom

Ingredients-

  • Mushroom – 200 grams chopped
  • Oil – for deep frying
  • Spring Onion – for garnishing
  • For Batter: 
    All Purpose Flour / Maida – 1 cup
    Corn Flour / Corn Starch – 1/2 cup
    Black Pepper Powder – 1 tsp
    Salt to taste
    Baking Soda – 1/2 tsp
  • For Sauce: 
    Oil – 1 tblspn
    Ginger – 1 tblspn minced
    Garlic – 1 tblspn minced
    Green Chilli – 2 chopped
    Dry Red Chilli – 1 broken
    Light Soya Sauce – 2 tblspn or to taste
    Vinegar – 1 tsp or to taste
    Chilli Powder – 1 tsp
    Salt to taste
    Sugar – 1 tsp
    Ajinomoto – 1 tsp (optional, i didn’t use)

Method-

  1. Heat oil for deep frying.
  2. Mix all batter ingredients to a smooth thick paste. Add chopped mushroom and mix well. Fry till golden brown. Drain and set aside.
  3. Heat a sausepan and add 1 tblspn of oil in a kadai. Add in ginger, garlic, green chilli, dry red chilli and fry till golden brown and crisp.
  4. Now add in soya sauce, vinegar, salt, sugar and mix well. Add some water and mix that well.
  5.  Now add in the fried mushroom pieces and mix well so the sauce coats all mushroom pieces.
  6. Add in spring onion and serve immediately.

10. Onion rings

Ingredients-

  • 2 medium Onion
  • 1/2 cup plus 2 tbsp All purpose flour (Maida)
  • 1/2 tsp Baking powder
  • 1/4 cup Corn flour
  • 1/2 tsp Oregano or any dry herb
  • 1 Garlic, finely chopped
  • 3/4 cup Milk
  • 3/4 cup Fresh bread crumbs
  • Salt & Pepper  as required

Method-

  1. Slice onion into thick discs and separate the rings
  2. Dust all the onion rings to flour to coat it. This is to ensure batter sticking to the onion later when we dip it in the batter.
  3. Now add corn flour (white corn flour/starch), dried herb, garlic and baking powder to the bowl. Mix well with a whisk to ensure even mixing.
  4. Add milk and mix well to make a batter, neither too thick nor too thin, just to give a even coating to the onion.
  5. Dip each ring in the batter and Coat each dipped onion ring with the bread crumb and arrange in a plate.
  6. Heat oil and put flame to medium. Fry the onion rings in medium flame until golden, turning once in between. Oil heat should be moderate, otherwise it will be darkening soon and wont be crispy. Drain in paper towel and sprinkle salt immediately over it.
